Eberle Tasting Room

A refreshing interior remodel brings modern functionality to a timeless Paso Robles winery

Gary loves people who love wine.

Eberle is one of the oldest wineries in Paso Robles, and Gary Eberle is the godfather of Paso wine. He’s made a deep imprint on our wine region. Absolutely everyone knows Gary.

The winery has a very large following and a growing membership, but the space really couldn’t hold everyone who wanted to hang out and sip and chat, even after a past expansion. The wine tasting room was dated and dark and didn’t at all reflect the life and vitality so evident in the guests, the delicious wine, and of course, Gary.

Space planning was paramount. Winery merch and gifts took up a lot of space, and the purpose of the rooms shifted with the seasons. We reimagined everything. Now, the staff can set up additional tasting counters on busy summer weekends—and on quiet winter days, a few tables are set up so guests can relax with a glass of wine by the fire. And Gary has room for his Christmas tree and train track.

We kept the existing bar but added new wine shelving all across the back. It gave the floor staff a lot more space to work, and minimized trips back to the store room, a game changer for flow and timeliness. New lighting, fresh paint, acoustical panels, and light wood stain completed the light, bright vibe. Hurrah! Or shall we say Syrah!
